Challah grilled cheese

(Serves 2)

Ingredients:

  • 4 slices of challah (1-inch thick)

  • 4 oz sharp cheddar cheese, shredded (or your favorite cheese)

  • 2 oz gruyère or mozzarella for extra meltiness (optional)

  • 2 tbsp butter, softened

  • 1 tbsp olive oil (optional for extra crispiness)

  • Optional Add-Ons: Caramelized onions, sliced tomatoes, or fresh basil

Instructions:

  1. Prepare the Bread:

    • Spread butter evenly on one side of each challah slice.

  2. Assemble the Sandwich:

    • Place two slices of bread, buttered side down, on a clean surface.

    • Add a generous layer of shredded cheese on each slice.

    • If using add-ons, layer them on top of the cheese.

    • Place the remaining slices of challah on top, buttered side facing out.

  3. Cook the Grilled Cheese:

    • Heat a skillet or griddle over medium-low heat. Add a small drizzle of olive oil for extra crispiness if desired.

    • Place the sandwiches in the skillet. Cook for 3-4 minutes per side until the bread is golden brown and the cheese is melted. Adjust the heat as necessary to avoid burning.

  4. Serve and Enjoy:

    • Slice in half and serve immediately. Pair with a side of tomato soup, a simple green salad, or pickles for a perfect comfort meal.

Pro Tips:

  • Cover the skillet with a lid while cooking to help the cheese melt faster.

  • Mix cheeses for extra flavor—combos like cheddar and gouda or mozzarella and parmesan work beautifully.

  • Add a sprinkle of garlic powder or a pinch of dried herbs to the butter for a twist.

Enjoy your rich, buttery challah grilled cheese!
